Making simple syrups is an easy way to add flavor to your coffee. Here are the recipes for some of my favorite flavors to add to coffee drinks. Pair any with tonic water and you have a delicious, refreshing drink!
Using white sugar will always work; I like to use different types of sugar for different flavors. Turbinado, Demerara, coconut sugar, cane sugar.
Note: not all sugar is vegan.

Simple Syrup can be stored sealed in the fridge for up to one month.

Recipes

Ginger Syrup

Makes 1 cup of syrup

1 cup sugar
3/4 cup water
1 cup sliced fresh ginger root, peeled and chopped

1. In a saucepan on medium heat, combine sugar and water. Stir until sugar is dissolved.

2. Add the ginger and continue to heat, bringing to a low boil.
Cover, reduce heat, and allow the mixture to simmer for about 15 minutes.

3. Strain out the pieces of ginger and store the syrup in a sealed container

Rosemary Syrup

Makes 1 cup of syrup

1 cup water
¾ cup sugar
¼ cup rosemary leaves or 2-3 large sprigs

1. Combine sugar and water in a saucepan. Place on medium heat.

2. Stir until sugar is dissolved.
Add the rosemary and continue to heat, bringing to a low boil.

3. Cover, reduce heat, and simmer for about 15 minutes.

4. Strain out the rosemary and allow it to cool before storing the syrup in a sealed container.

Mint Syrup

Makes 1 cup
1 cup water
½ cup sugar
½ cup fresh mint leaves

1. Combine sugar and water in a saucepan. Place on medium heat, and stir until sugar is dissolved.

2. Add the mint leaves. Reduce heat to a simmer and cook for about 10 minutes.


3. Strain the mint leaves and allow the syrup to cool before transferring to a sealed container and storing it in the refrigerator.

Coffee Mojito

2 oz mint syrup
1 oz lime juice
1 cup iced coffee

Optional
1 ½ oz rum
4 oz tonic water

1. Add iced coffee, mint syrup, lime juice, and ice to a cocktail shaker.

2. Shake. I add a splash of coconut milk to mine as well, to give it a creamier, and even more tropical flavor.

3. Garnish with some mint leaves left over from your mint syrup! Add some rum if you’ve already had enough coffee for the day. The alcohol cancels out the caffeine I’m pretty sure.

Limonada de coco

To go along with our Colombian coffee, Limonada de coco is a delicious and refreshing Colombian drink. Adding coffee is optional, it’s good either way!

Makes 2 servings
1 cup coconut cream
2 ½ cups crushed ice
Juice of 6 limes
1 tablespoon of sugar or 1 oz of simple syrup, to taste

Optional
6 oz of iced coffee

Blend and serve!

Cafe de Olla

Coffee Tonic

Good in any form, with any syrup or flavor additions.

Equal parts iced coffee and tonic water.

Optional
Orange juice/zest
Lime juice/zest
A splash of your homemade ginger, mint, or rosemary syrup!
